Durian fruit

Durian fruit from Southeast Asia are oval, up to 20cm in diameter and weighing up to 5 kg. It has a hard, greenish rind covered with large thorns. The whitish to creamy brown flesh has a distinctive putrefying smell that is almost nauseating when the fruit is overripe. It’s usually eaten raw.

Dukkah

Dukkah is a delicious spice and nut mixture, originally from Egypt. The nuts can be any you have at hand, but hazelnuts and pistachios are the most common. Spices include cumin and coriander, but also salt and pepper. Toasted sesame seeds are also sometimes added.

The most popular way to consume dukkah is to take crusty bread, tear off a piece and diip it first in olive oil then in the dukkah.

Dukkah can also be used as a rub on meats before grilling. Make your own with this dried mint and hazelnut dukkah with olive oil and crispbreads recipe.
