Cinnamon, apple and vanilla oat bowl

Ingredients
150 g rolled oats
1 litre coconut milk
1 t ground cinnamon
¼ t ground nutmeg
1 t sea salt
1 vanilla pod, seeded
4 T Muscovado sugar
1 green apple, cut into matchsticks
Method
In a medium saucepan, combine the oats, coconut milk, cinnamon, nutmeg, salt and vanilla seeds. Cook for 10–12 minutes or until the oats are tender.
Sprinkle with the sugar and top with the apple.
Cook's note:
Use coconut ugar if you prefer it to Muscovado
